5 Easy Nutritious Pancake Recipes

These pancakes come together in less than 15 minutes and are the perfect way to use up those overripe bananas!  Our users have commented on how much their little ones love this recipe and how it’s also a good option for taking when you’re out and about since they aren’t too messy to eat.

BANANA PANCAKE RECIPE

Ingredients:

  • 1 ripe banana, mashed (~1/2 cup) 
  • 1 egg (or 1 flax egg) 
  • 3 tablespoons oat flour (or baby oat cereal) – gluten-free if necessary
  • Cinnamon – to taste
  • Coconut oil or butter, for greasing

Directions:

  1. In a small bowl, lightly beat the egg with a fork or whisk, if using.
  2. Add the remaining ingredients and mix well. If you prefer a smoother batter, you can blend it all together in a blender, but it’s not necessary.
  3. Heat a non-stick skillet on medium heat and grease with a 1-2 tsp of coconut oil (or butter). Be sure to spread oil evenly across the pan.
  4. Pour ~2 tablespoons of batter onto the skillet. Cook on medium-low heat until bottom side starts to brown (~2 minutes), then flip and cook the other side (~2 minutes). These are easier to flip and cook of you make smaller pancakes.

Servings: Makes about 3-4 small pancakes, amount may vary depending on how you shape them.

Storage: Can be kept in the fridge for 3 days, but taste best if eaten right away.

Suitable from: 6 months + as long as allergens (eggs and wheat if not using GF oats) have been introduced.

These are such a great way offer veggies so that your little one is aware of them (so you’re not tricking them into eating veggies), yet in a way that is easy for them to self-feed and chew.

If you add a cheese spread or dipping sauce these can be a full meal, containing carbohydrates, protein, healthy fats and veggies.

Go ahead and add some seasonings that your family loves (like garlic powder, onion powder, or paprika).

These savory pancakes are also highly customizable and our users have mentioned using almond flour, chopped tomato, cheese, breadcrumbs and a large variety of spices!

These are not sweetened, so you could even serve them with savory foods, or add your favorite fruit-sweetened jam, maple syrup or honey (for 2 years +).

You can mix berries, jam or other add-ins straight to the batter for lots of different flavors!

These sweet potato pancakes are so nutritious and have no refined flour, so they are a great option for little ones who have gluten sensitivities.

The carrot adds a little extra texture, nutrients and flavor. These could also be made sweet or savory depending on what you pair them with.
